Convection Ovens

To be completely sure that you are investing in the best convection oven for your space, menu, and staff, let’s run through the different types of ovens and how to seamlessly add them into your space.

Types of Commercial Ovens

Countertop and Floor-Standing Commercial Oven Models
While some restaurants want ovens they can integrate into a stacking environment with a countertop model, others want floor-standing commercial ovens. Part of this has to do with the normal process for cooking –for example, whether a staff needs a full oven, or a cheesemelter/salamander design that may be more for finishing or browning food.

Rotisserie Ovens
Rotisserie ovens are made to handle revolving chickens and other skewered items. Many of them are made with specific stay-hot technology to keep temperatures above a certain range, in order to keep food safe for purchase during a market day’s time.

Baking Ovens, Pizza Ovens, and Rack Ovens
Various types of commercial baking ovens have horizontal interiors where you can slide pizza, strombolis, sub rolls or other items in, and position them for optimal cooking. Some of these newer models represent the “wood-fired oven” that adds panache to a menu.

Conveyor Ovens
Other types of ovens, like restaurant pizza ovens, have a conveyor oven feature, where food comes in and passes through in a particular ‘heat zone’ that will make sure it is cooked correctly.

Microwave Ovens
While many professional chefs urge restraint in using a microwave in a commercial kitchen, commercial microwave ovens can be absolutely handy for tasks like reheating and plate building.
