Most professional cookware lack nonstick finishes. Chefs avoid nonstick pans because nonstick coatings impair heat transference, making such pans slow to heat up. Nonstick pans damage quickly when exposed to dishwashers, high temperatures, and scrub brushes. They’re also not suitable for oven use. Chef cookware cannot be so delicate.

Cooking in rusted commercial cookware can produce unwanted flavors in your food. Cast iron pans are the most likely to rust, but even stainless steel pots can corrode over time. Unless the pot is heavily rusted, you can save it by covering it with baking soda, letting it sit for an hour, and then scouring the pan to get the rust off. Cast iron pans should be scrubbed with steel wool, washed, and dried thoroughly. Use a paper towel to coat the inside of the pan with a small amount of oil, then re-season the pan.
