A commercial deep fryer helps you cook large batches of fried foods like chicken wings and french fries. While a standard fryer takes up to 15 minutes to reach high temperatures, commercial models work much faster. Why Should You Clean a Fryer?

After repeated uses, you'll notice the color of the fryer oil changes. Not only will this color affect the smell, but it also affects the taste of the food you send out to diners. Using old oil can result in diners leaving bad reviews for your restaurant and demanding their money back.

If your menu only features a few fried dishes, you may find that you can go up to two weeks before changing the oil. When you use the industrial deep fryer more often, however, you should replace the oil at least once a week. Keep in mind that changing the oil does not take the place of a thorough cleaning.

Cleaning your deep fryer also helps you prevent accidents and fires. The National Fire Protection Association found that kitchen equipment caused 61% of restaurant fires. Keeping your fryer clean will protect your building, your employees, and your other equipment.

How to Clean an Industrial Deep Fryer

The most common method of cleaning an industrial deep fryer requires boiling water and a commercial cleanser inside the appliance. Creating a routine schedule to clean your fryer and other food warming equipment is helpful.

Boil Method

The boiling method is popular because it suits gas and electric fryers. Always turn the appliance off and either unplug or disconnect the gas line. Place a bucket or container under the drain and open the drain valve. You'll wipe down the inside once the fryer is empty and then fill it with water and a degreaser or fat cleaner. We offer a variety to choose from. Turn the fryer back on and boil the mixture for up to 30 minutes. Drain the fryer and rinse the inside before you wipe it down and refill it with oil.

Alternative Products

If you don't have a degreaser, you can use ordinary dish soap and a little white vinegar. Add a tablespoon of liquid dish soap to the fryer when you fill it with water and 1/2 cup of distilled white vinegar. You will then bring the mixture to a boil and keep it there for 30 minutes. Make sure you rinse the fryer to remove all traces of the soap and vinegar before replacing the oil.

No matter which option you choose, never clean a fryer without wearing PPE. A disposable face mask is a good way to keep yourself or your workers safe as the degreasers and other cleaning solutions can produce fumes that make people sick when inhaled. Disposable masks do a good job of blocking those fumes and also come in handy when cleaning bathrooms and other areas.
