When you think commercial convection oven, you are probably thinking about the Blodgett DFG-200-ES Bakery Depth Convection Oven. This oven is built to have the lowest cost of ownership over its life. Its extra depth baking compartment has a porcelainized / stainless steel liner. The compartment accepts (5) 18 inch x 26 inch standard full-size baking pans in left-to-right or front-to-back positions.
This oven is constructed with stainless steel front, top and sides. Its doors are made of dual pane thermal glass windows and a powder-coated handle. This gas heated unit, with an electronic spark ignition, cooks by means of a direct fired system with a gas shutoff switch on the front of the control panel. The air in the baking chamber is distributed by a single inlet blower wheel powered by a 2-speed, 3/4 HP motor with thermal overload protection. The chamber is fitted with (2) halogen lamps, (5) chrome-plated removable racks and removable crumb trays.
